2 9” pie shells
1 10 oz. package frozen strawberries, thawed
1 1/4 c. sugar
1/4 t. salt
3 T. cornstarch
2 heaping pt. fresh strawberries
Combine the thawed frozen strawberries, sugar, salt, and cornstarch in a blender.
Pour into a saucepan and cook until thickened and bubbly, adding red food coloring if desired.
Remove from heat and cool while you wash and drain the fresh berries.
Slice them if they are very large.
Stir them into the glaze.
Pour into cooled, baked pie shells.
Top with sweetened whipped cream (1 c cream whipped with 1/4 c sugar).
Jean was not the only one who liked this pie. When Henry, Joan, Aaron, and Ike visited Uncle Alvin and Aunt Sally in Nashville once, Uncle Alvin took them out to Shoney’s for some strawberry pie.
